Home-Made Paleo Caesar Dressing

Why it took us so long to FINALLY get some Caesar Dressing on the menu.. we don’t know. What we do know, this Paleo and Whole30 dressing is frickin’ G-O-O-D! You can make this dressing at home in just a few minutes with just a mason jar, immersion blender, and the ingredients. (You can also use a blender or food processor but we really love the ease and easy clean up of the jar and immersion blender!)

Recipe is as follows:
  • 1 Cup home-made mayo (don’t forget to use light tasting olive oil)
  • 1 TBSP dijon mustard
  • 3 cloves of garlic, smashed and peeled
  • 5 whole anchovy filets or 1 TBSP anchovy paste
  • 1 tsp Pepper
  • 1/2 tsp salt
  • Juice from 1 lemon
  • 1-2 TBSP water (optional to thin)
Make your mayo first then add the rest of the ingredients except the water. Blend well. If you prefer a thinner dressing, add 1-2 TBSP of water. Dressing will thicken once refrigerated.
