Quick and OH-SO-EASY Mushroom Onion Gravy
It’s taken us some time to find a Primal gravy that we just can’t get enough of. We’ve tried a few different recipes, studied dozens more, mixed and matched and experimented, but our favorite, and even better, the simplest of them all is this basic mushroom and onion gravy. It’s thick (or thin if you please) and flavorful and you need only a handful of ingredients to get it done.
Let’s talk thickener really quick.
If you’ve been eating Paleo or Primal for a while, or if you follow a gluten free diet, you’ve probably seen a lot of tapioca or arrowroot starches used as thickeners. While these thickeners can work well, I’ve found that they can be finicky, especially if you are not going to eat the foods prepared with them immediately (i.e. when meal prepping). At PPN, we prefer to use potato starch as a thickener. It thickens well, it doesn’t flatten if it gets too hot, and it doesn’t turn into a thick slimy substance when chilled. Potato starch is what we will use to thicken this gravy.
Now for the recipe!
- 2 Cups beef stock (bonus points for home-made beef bone broth!)
- 2 TBSP avocado oil (or cooking oil of choice)
- 1/2 onion, diced or sliced
- 1 Cup sliced mushrooms
- 1/2 tsp pepper (more to taste)
- 1-2 TBSP potato starch + 1-2 TBSP water
- Salt to taste
Add cooking oil and onions to sauce pan over medium heat. Stir until onions are translucent, 5-6 minutes. Add pepper and mushrooms and stir 1 minute. Add beef stock and bring to light simmer. Let simmer until mushrooms are cooked, about 6-8 minutes. In a small bowl, combine 1 TBSP potato starch and 1 TBSP cold or room temperature water, mix until potato starch is dissolved. Pour starch mixture into gravy and let simmer and additional 2-3 minutes while stirring frequently. Sauce should thicken. If sauce doesn’t thicken or you want a thicker sauce, add an additional 1 TBSP potato starch + water combination and simmer an additional 2-3 minutes. Add salt and viola! Gravy!
